What I made for Father’s Day…
There’s something nostalgic about cobbler—the bubbling fruit, the golden topping, and the way it makes the whole house smell like a warm hug. This Father’s Day, I wanted to make something sweet and comforting that felt like summer… without totally derailing our healthy habits.
This gluten-free blackberry cobbler checks every box. It’s easy to make, uses ingredients I already had on hand (shoutout to my trusty 1:1 gluten-free flour and quick oats), and it got a big thumbs up from my husband.

Ingredients:

1 tbsp lemon juice
2–3 tbsp maple syrup or honey (adjust based on berry sweetness)
1½ tbsp arrowroot starch or cornstarch
1 tsp vanilla extract
Pinch of sea salt
For the Topping:
½ cup gluten-free 1:1 flour (I used Bob’s Red Mill)
½ cup quick oats
¼ cup coconut sugar or brown sugar
¼ tsp cinnamon
¼ tsp sea salt
⅓ cup melted butter or coconut oil
1 tsp vanilla extract
Directions:
Preheat your oven to 350°F.
Mix the filling: In a medium bowl, combine the blackberries, lemon juice, maple syrup, arrowroot, vanilla, and salt. Stir gently and pour into a greased 8x8 baking dish.
Make the topping: In a separate bowl, combine the flour, oats, sugar, cinnamon, and salt. Stir in melted butter and vanilla until the mixture is crumbly.
Assemble: Sprinkle the topping evenly over the berries.
Bake for 35–40 minutes, or until the top is golden and the berries are bubbling around the edges.
Let it cool for about 10–15 minutes before serving (this helps it set a bit).
