Creamy Chicken & White Bean Detox Soup

Talk about a cozy, protein-rich reset meal!

After heavy meals, late nights, or just feeling a little off, this is the kind of soup that brings you back to center. It is warm, comforting, and nourishing without being heavy, complicated, or restrictive.

This chicken and white bean soup is one of my go-to meals in January because it supports digestion, keeps blood sugar steady, and feels genuinely satisfying. It is simple, real food that does its job.

Why this soup works so well

When energy feels low or cravings feel loud, it is often a sign that your body needs more support, not less food. This soup is built around that idea.

Chicken provides high-quality protein to keep you full and support muscle. White beans add fiber, which slows digestion and helps stabilize energy levels. Broth-based soups are hydrating and easy to digest, making them especially helpful after travel, indulgent weekends, or stressful weeks.

The creaminess comes from Greek yogurt, which adds protein and richness without making the soup heavy. Warm, savory meals like this tend to be more satisfying than cold foods in winter, which makes consistency easier.

A simple chicken prep that makes life easier

I like to cook my chicken ahead of time and keep it in the fridge so meals like this come together fast.

I usually add two to three chicken breasts to a crockpot, cover them with chicken broth, and cook on high for three to four hours. Once the chicken is tender, I shred it and store it in the fridge until I need it.

Having cooked, shredded chicken on hand is one of the easiest ways to make healthy meals happen during the week. It works for soups, salads, bowls, wraps, and quick dinners like this one.

Seasoning options

For this recipe, you can use either Italian seasoning or Herbes de Provence.

Italian seasoning gives the soup a familiar, cozy flavor that most people love.
Herbes de Provence makes it feel a little lighter and more aromatic, with notes of thyme and rosemary.

Both work well, so use what you already have.

Creamy Chicken & White Bean Detox Soup

Serves 4 to 6

Ingredients
2 tablespoons olive oil
1 small onion, diced
3 carrots, peeled and sliced
3 celery stalks, sliced
3 cloves garlic, minced
1 to 1½ teaspoons Italian seasoning or Herbes de Provence (I used Herbes de Provence)
½ teaspoon sea salt, plus more to taste
Black pepper to taste
4 cups chicken broth or bone broth
1 (15-ounce) can white beans, drained and rinsed
2 cups cooked, shredded chicken
2 cups chopped spinach or kale (I used spinach)
½ cup plain Greek yogurt
Juice of ½ lemon
Fresh parsley, for serving

Directions

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 to 6 minutes until softened.

Add garlic and seasoning and cook for another minute until fragrant.

Pour in the broth and add the white beans. Bring to a gentle simmer and cook for about 15 minutes.

Stir in the shredded chicken and greens and simmer another 5 minutes until the greens are tender.

To keep the yogurt from curdling, scoop a ladle of the hot broth into a bowl and whisk it into the yogurt to temper it. Once smooth, stir the yogurt mixture back into the soup and have the heat turned off at this point.

Add lemon juice, taste, and adjust salt and pepper as needed.

Serve warm, topped with fresh parsley.

How to make it work for your week

This soup reheats well and makes an excellent lunch. If you plan to reheat multiple servings, warm gently and stir well to keep the texture creamy.

You can also double the batch and freeze half for a future week when you want something nourishing without cooking.
