Tomato Flights: The Summer Snack You Didn’t Know You Needed
If you’ve ever wandered through the farmers market and thought, what do I even do with all these gorgeous tomatoes? this one’s for you.
Let me introduce you to the tomato flight.
It’s like a tasting board, but instead of cheese or wine, we’re letting peak-season tomatoes take center stage. This is one of those fun, beautiful food moments that makes you feel like you're treating yourself, even though it's actually aligned with your goals.
I made four versions, and every single one felt fresh, flavorful, and a little bit fancy. Here’s how I put it together.
🛒 What You’ll Need
This is more of a concept than a strict recipe, so mix and match what you have.
A variety of tomatoes: heirloom, cherry, grape, yellow, or green zebra
Olive oil
Sea salt and cracked black pepper
Balsamic glaze
Hot honey
Lemon zest
Fresh herbs (I used chives and parsley)
Whipped feta (recipe below)
Optional: mozzarella, burrata, or other creamy toppings
🍅 The Flavor Combos I Made
Caprese Style
Heirloom tomato with fresh mozzarella, fresh basil, balsamic glaze, and flaky salt
This one is always a hit and never gets old.
Lemon + Sea Salt
Thick tomato slice with olive oil, lemon zest, and sea salt
Clean and bright. It really highlights the flavor of the tomato.
Hot Honey Heat
Cherry tomatoes (I used sliced tomato, but cherry tomatoes would be ideal) drizzled with hot honey and sprinkled with chili flakes
Sweet and spicy with a little kick.
Whipped Feta Creamy
Tomato slice topped with whipped feta, chives & parsley.
Creamy, savory, and fresh. This might be my favorite one. I just love the whipped feta on everything though!
🌿 Whipped Feta Recipe
This is easier than it sounds, and it makes everything feel a little more special.
What You Need:
1 block of feta cheese (about 6 to 8 oz)
2 to 3 tablespoons of plain Greek yogurt
1 to 2 tablespoons of olive oil
Optional add-ins: lemon juice, garlic, fresh herbs
How to Make It:
Blend everything in a food processor until smooth. Scrape down the sides and blend again until light and fluffy. If it’s too thick, add a splash more olive oil or yogurt. If it’s too salty, a little more yogurt will balance it out.
I used chives and parsley in mine, but here are some other great herb options:
Dill (especially with lemon zest or cucumber)
Basil (for that Caprese feel)
Mint (surprisingly good with hot honey)
Thyme or oregano (just a small amount adds depth)
Make a batch and store it in the fridge for up to five days. It’s amazing on tomatoes, but also great as a dip for veggies or crackers.

If you want to turn this into more of a meal, here are a few easy ideas that still feel light but satisfying:
Top tomatoes with shredded rotisserie chicken and a drizzle of pesto
Add hard-boiled egg slices with smoked paprika and sea salt
Layer with turkey bacon crumbles and a little avocado
Use a scoop of cottage cheese with chili flakes and fresh herbs
Add a slice of grilled steak or shrimp over the whipped feta for a flavor-packed bite
👩🍳 How I Served It
I laid everything out on a white platter (a wooden board would be perfect!) and arranged each tomato slice in a row. For a crowd, you can use a larger tray and put them in rows. You can label them with little toothpick flags or just let people dig in. If you're hosting, add some mini forks or cocktail picks to keep it easy.
This would be perfect for a patio snack, girls’ night, or even as a light lunch when you're craving something different.
