Healthy Baked Chicken Meatballs: 40 Gluten-Free Meatballs in 30 Minutes

They’re juicy, gluten-free, and packed with flavor! Plus they bake in under 30 minutes and make about 40 meatballs, so you can feed a crowd, stock the freezer, or knock out your weekly meal prep in one go.

I love serving them over roasted spaghetti squash (but they’re just as delicious with your favorite gluten-free pasta or zucchini noodles). I toss them in Rao’s Tomato Basil sauce (my go-to store-bought sauce) but use whatever marinara you love.

Pro Tip: Look for sauce that is low in sugar, like this one. You would be surprised how much sugar some jar sauces contain.

Baked Chicken Meatballs: Gluten-Free & Delicious
Makes about 40 meatballs

Ingredients:

  • 2 lbs ground chicken

  • 1 cup grated Parmesan

  • 1 cup gluten-free Italian breadcrumbs

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • 2 eggs

  • Drizzle of olive oil

  • ½ cup marinara (I use Rao’s Tomato Basil)

  • Optional: 1 tbsp chopped fresh parsley

Instructions:

  1. Preheat your oven to 400°F. Line two baking sheets with parchment paper.

  2. In a large bowl, mix all ingredients by hand (yes, clean hands are best here!) until fully combined.

  3. Use a small cookie or ice cream scoop to form even-sized meatballs (roll in your hands) and place them on the baking sheets.

  4. Bake for about 20 minutes, or until they’re cooked through and lightly golden.

  5. Transfer the meatballs to a pot of warm marinara sauce and let them simmer for 5–10 minutes to soak up the flavor.

  6. Serve over spaghetti squash, gluten-free pasta, or zucchini noodles.

💡 Serving Tips:

  • Start roasting your spaghetti squash before you make the meatballs for a stress-free dinner that comes together perfectly.

  • These freeze beautifully. Let them cool completely, then freeze in a single layer before transferring to a container.

  • Want to level up the flavor? Add red pepper flakes, fresh basil, or a spoonful of pesto to your sauce.
