I made this after spotting it on TikTok, and it was an instant hit. My husband loved it, friends went back for seconds, and it disappeared way faster than I expected. That’s always the sign of a keeper.

Think of it as a mash-up of nachos and a casserole. Crunchy tortilla chips, saucy shredded chicken, melty cheese, beans, and all the toppings everyone loves. It’s casual food done right.

Chicken Chip Bake Ingredients

  • 3½ cups chopped, cooked chicken

  • 1 (10 oz) can green enchilada sauce

  • 16 oz Monterey Jack cheese, shredded and divided

  • 4 green onions, sliced

  • Cooking spray

  • 14 oz thick-cut homestyle tortilla chips

  • 1 (15 oz) can pinto beans, drained and rinsed

  • 2 (10 oz) cans red enchilada sauce, divided

For serving (optional but highly encouraged):
Pico de gallo, salsa, avocado or guacamole, pickled jalepenos, cilantro, sour cream…

How to Make It

Preheat oven to 425°.

In a bowl, stir together the cooked chicken, green enchilada sauce, 1 cup of the shredded cheese, and most of the green onions. Set aside.

Spray cooking spray over the bottom of a deep 9×13 baking dish. Add half of the tortilla chips.

Top with pinto beans and another cup of shredded cheese. Pour about ¾ cup of the red enchilada sauce over the chips.

Spread the chicken mixture evenly over the top. Add the remaining chips and pour the rest of the red enchilada sauce over everything.

Top with the remaining cheese.

Cover with foil and bake for 20 minutes.
Uncover and bake an additional 10 minutes, until bubbly and lightly browned.

Finish with remaining green onions and serve with all your favorite toppings.
